White Bean Chicken Chili recipe from Smith’s Food and Drug

White Bean Chicken Chili : Yields 6
¾ lb Chicken (Picked Rotisserie Chicken)
2 16 oz cans Great Northern White Beans
1 cup canned sweet corn
3 cups chicken stock
1 ¼ cups sharp shredded cheese
2 tbl olive oil
4 garlic cloves minced
1 Medium onion diced
1 Jalapeno diced
2 tsp oregano
1 tsp cumin
Garnish with sour cream & fresh cilantro
Saute all vegetables & garlic, add shredded chicken pieces & stock, bring to a boil. Add beans & spices, let simmer for 20-30 minutes add cheese then mix until melted. Serve plain or garnished with sour cream or cilantro.
