Chicken Provencal

CHICKEN PROVENCAL

“Provencal style” in a recipe generally pertains to cooking with fresh tomatoes, white wines,
and a simple combination of fresh herbs. After that add vegetables and numerous different
proteins according to your desires that day!

Ingredients

4 EA
2 TBSP
1 TBSP
½ Cp
1 Cp
2 TBSP
1 ½ Cp
1 Cp

Chicken Breasts, Boneless, Skinless
Olive Oil
Garlic, Minced

White Wine
Rosemary, Fresh, Minced
Tomatoes, Fresh Diced
Mushrooms, fresh
Salt
Pepper
Asiago Cheese (Optional)

Onion, Julienne

Directions

1) In large sauté pan, heat olive oil, sear chicken breasts on both sides, cook until about ¾
done and remove from pan. Put on plate and invert another plate over to keep warm.
2) Add garlic and onion to pan, over medium heat cook until onion starts to become tender
and translucent. Add white wine and rosemary, bring to boil and scrape up anything
stuck to bottom of pan. Cook until wine is reduced by ½.
3) Add tomatoes, mushrooms and salt and pepper to taste, simmer 5 minutes.
4) Add Chicken and any juices back to pan reduce heat to a simmer and simmer until
chicken is cooked through. Taste and adjust seasoning, if desired thicken with
cornstarch slurry. Serve over Polenta.
